I have been a chef for over thirty years now, and have traveled the world… eating my way through every place I’ve been. I love to travel, I love to eat, and I love to learn.

The salts I’ve created are a product of a lifetime of absorbing where I’ve been, the people I’ve met, and years of cooking.

My salts literally have the essence of the years of learning, traveling, and my passion for food… all packed into a 2-ounce pouch!

When you open my Tuscan blend salt, you will immediately smell the hills of Italy and the South of France. You smell the rosemary, the sage, the fennel, and the minerals in the earth. This is my most popular blend because you can use it on practically anything. I have put aside my regular salt and use this salt almost exclusively.

The Essence of Provence is my second most popular, and puts you right in the middle of a vineyard in the south of France. You breath in the familiar sent of regional herbs accented with lavender.

There is no thinking involved with my salts… just use them like you would any regular salt. No need to add any other seasoning because it’s already there in the salt, making whatever you are cooking the best it’s ever been, and without making it specifically “Italian” or “French”.

One of my secrets comes from something I discovered while in Chianti. Fennel Pollen. Now, if you are like me, fennel may not be your favorite because of its strong black licorice flavor. Totally understandable, but the pollen from this plant has a completely different flavor… a secret element that adds such amazing dimension and depth to food. It will blow your mind!

I also only use high-grade Himalayan pink salt and Mediterranean sea salt. So, not only is the flavor better, but my salts are much healthier than table salt.
